The petals will give a pink tinge to the ice cream but if you want a deeper color, make a beet juice dye: Chop 3 Tablespoons of fresh beets. Cover with water in a saucepan. Bring to a boil. Allow to Cool. Add to the ice cream while it's mixing 1 Tbsp. at a time until desired color is reached.
